Afghan Biscuits
Serves 12
- 375g butter, softened
- 3/4 cup sugar
- 1 3/4 cups flour
- 6 tablespoons cocoa
- 3 cups cornflakes
- Simple chocolate icing
- Walnuts to serve, chopped in half
- Preheat the oven to 180 degrees C.
- In a large mixing bowl, cream butter and sugar together with an electric beater until lightened in colour.
- Fold into the creamed mixture the cocoa, flour and cornflakes.
- Roll into small balls and place on a baking sheet lined with parchment paper. Lightly press the balls down to squish them a little.
- Place in the preheated oven and bake for 20 minutes. Ice the biscuits with a simple chocolate icing and decorate with half a walnut. Enjoy!
Simple chocolate icing
- Croissant dough (See above)
- 6 thin slices ham, each quartered
- 1 1/2 cups grated swiss or cheddar cheese
- Whisk butter and icing sugar together. Add water and cocoa powder (Add water slowly to make sure that the icing is the right consistency). Whisk together.
