Afghan Biscuits

Serves 12

  • 375g butter, softened
  • 3/4 cup sugar
  • 1 3/4 cups flour
  • 6 tablespoons cocoa
  • 3 cups cornflakes
  • Simple chocolate icing
  • Walnuts to serve, chopped in half
  1. Preheat the oven to 180 degrees C.
  2. In a large mixing bowl, cream butter and sugar together with an electric beater until lightened in colour.
  3. Fold into the creamed mixture the cocoa, flour and cornflakes.
  4. Roll into small balls and place on a baking sheet lined with parchment paper. Lightly press the balls down to squish them a little.
  5. Place in the preheated oven and bake for 20 minutes. Ice the biscuits with a simple chocolate icing and decorate with half a walnut. Enjoy!

Simple chocolate icing

  • Croissant dough (See above)
  • 6 thin slices ham, each quartered
  • 1 1/2 cups grated swiss or cheddar cheese
  1. Whisk butter and icing sugar together. Add water and cocoa powder (Add water slowly to make sure that the icing is the right consistency). Whisk together.
