Thai Chicken Meatballs
Serves 8
- 1 kg chicken mince ( ground chicken)
- 1 cup fresh breadcrumbs
- 4 spring onions, sliced
- 1 tablespoons ground coriander
- 1 cup chopped fresh coriander
- 3 tablespoons sweet chilli sauce
- 2 tablespoons lemon juice
- 1 medium brown onion, finely diced
- oil, for frying
- Preheat oven to 200 degrees C.
- in a large bowl, mix together the chicken and breadcrumbs. Season with the onion, spring onion, ground coriander, fresh coriander, sweet chilli sauce and lemon juice. Mix well.
- Using damp hands, form the mixture into evenly shaped balls that are small enough to eat with your fingers.
- Heat the oil in frying pan, and shallow-fry chicken balls in batches over high heat until browned all over. Place them on a baking tray and bake until cooked through, about 5 minutes.
- Serve as appetisers with sweet chilli sauce or as a main with rice or noodles and some asian greens. Enjoy!
