Thai Chicken Meatballs

Serves 8

  • 1 kg chicken mince ( ground chicken)
  • 1 cup fresh breadcrumbs
  • 4 spring onions, sliced
  • 1 tablespoons ground coriander
  • 1 cup chopped fresh coriander
  • 3 tablespoons sweet chilli sauce
  • 2 tablespoons lemon juice
  • 1 medium brown onion, finely diced
  • oil, for frying
  1. Preheat oven to 200 degrees C.
  2. in a large bowl, mix together the chicken and breadcrumbs. Season with the onion, spring onion, ground coriander, fresh coriander, sweet chilli sauce and lemon juice. Mix well.
  3. Using damp hands, form the mixture into evenly shaped balls that are small enough to eat with your fingers.
  4. Heat the oil in frying pan, and shallow-fry chicken balls in batches over high heat until browned all over. Place them on a baking tray and bake until cooked through, about 5 minutes.
  5. Serve as appetisers with sweet chilli sauce or as a main with rice or noodles and some asian greens. Enjoy!
